– Skewer Sticks, Wooden or Metal
– 24 Prawns, Deveined etc.
– 1 Tub of Green Pesto
– A Squeeze of Fresh Lemon
– Herbs of Your Choice to Garnish
Step 1: Thread the prawns on the skewers place them into a baking tray and spoon over half of the pesto tub, massage in to make sure the prawns are covered in the pesto. Allow them to marinate for an hour.
Step 2: In the meantime heat up the bbq, place the pesto prawn skewers on the grill, and grill on each side for 2 minutes until cooked. Alternatively, you can heat up a pan or griddle pan and cook the prawn skewers for a couple of minutes each until they lose the opaque look.
Step 3: Transfer them to a serving plate, drizzle the rest of the pesto over the top add a squeeze of lemon, garnish with herbs and serve.
