Pesto toast is a delicious and simple dish putting a pep into any weekend breakfast. We have used, in our opinion the best fresh basil pesto on the Irish market, created by The Galway Kitchen and is available in Tesco Stores nationwide. Once the pesto is spread on the toast, it’s easy garnished with additional ingredients like cherry tomatoes, mozzarella cheese, or a drizzle of balsamic glaze for added texture and taste. However, in this recipe we give you two types to enjoy!!
Pesto Toast #1 – Asparagus Pesto Toast

Ingredients
- Asparagus
- Cream Cheese
- Prosciutto
- Mushrooms
- Pesto
- Flaked Almonds
Method
Toast a slice of Sourdough on a pan, spread a generous amount of Cream Cheese on top, now cover the toast with Prosciutto and top with some grilled Mushrooms. Add 3 spears of Asparagus and drizzle on the Fresh Pesto, garnish with some flaked Almonds.
Pesto Toast #1 – Classic Pesto Mushroom Toast

Ingredients
- Mushrooms
- The Galway Kitchen Fresh Basil Pesto
- Cream Cheese
- Fresh Basil
- Grated Parmigiano
Method
Toast a slice of Sourdough on a pan, spread a generous amount of Cream Cheese on top, now cover the toast with a bed of Fresh Pesto and add some Grilled Mushrooms. Finally, topped with Fresh Basil & a sprinkling of Parmigiano.
