From an exclusive evening of rosé wines in June, hosted by Maison Mirabeau Founder and Winemaker Stephen Cronk, to a season of serves amidst the floral-decked Terrace, WILDE at The Westbury will be celebrating Rosé all summer long
Summer is finally here, and the team at WILDE at The Westbury are ready to roll out the pink carpet in celebration, indulging in the finest rosé wines and blush-coloured cocktails. The Westbury is once again partnering with the esteemed Maison Mirabeau in Provence and, from June to September, the elegant Terrace overlooking Grafton Street will be decked out in a glorious installation of blooms created by Kasia Skopinska – creating the perfect setting for guests to enjoy a summer rosé tasting experience.
WILDE’s exclusive Flight of the Rosé tasting experience, €30, includes a 75ml pour of each of the three rosés from the Mirabeau collection: Mirabeau Pure Rosé 2022 (normally priced at €17 per glass, €67 per bottle, or €130 per 1500ml magnum bottle), Mirabeau Etoile Rosé 2022 (€19 per glass, €75 per bottle), and Mirabeau La Folie Sparkling Rosé (€19 per glass, €77 per bottle). You will be guided through the notes of each pour in this unique tasting experience, offering the perfect opportunity to sample a taste of Provence in the heart of Dublin. Each wine has been selected by The Doyle Collection’s Group Sommelier, Philip Dunne.

This summer’s Rosé on the Terrace cocktail offering features five specially created pink cocktails – A Mirabeau Cup, €17, featuring Mirabeau Pure Rosé, raspberry, rhubarb, mint and cherry tonic; the Madame Rosé, €17, made with Mirabeau Dry Gin (a herbaceous-style dry pale pink gin), pêche de vigne, grapefruit, lime and blueberry syrup; the Summer Rosé G&T, €17, a mix of Mirabeau Dry Gin, elderflower, cherries and cherry tonic; the Rosé Negroni, €17, a refreshing twist on the old classic made with Mirabeau Rosé Gin, Campari and vermouth; and the Fraise Sauvage, €17, a summery blend of Mirabeau Dry Gin, lemon, simple syrup, strawberry and Mirabeau La Folie Sparkling Rosé.
As a highlight of our Rosé summer season, WILDE at The Westbury will present an exclusive evening of rosé wines hosted by Stephen Cronk, Founder and Winemaker at Maison Mirabeau on Thursday, June 22nd. Guests will be treated to a delicious five-course menu created by Executive Chef Sandeep Singh, with each course expertly paired with a Mirabeau rosé serve.

The evening will begin with Carlingford rock oysters with ponzu and beetroot granita paired with Mirabeau La Folie NV Sparkling Rosé followed by a celebration of Irish seafood: Dinish Island crab and avocado tartar, seared Castletownbere scallop, seaweed aioli, tempura Dublin Bay prawns and Korean slaw served with Mirabeau Pure Rosé 2022 served from a Magnum. Guests will then dine on pan-fried Atlantic halibut fillet, saffron mousseline, green asparagus and sauce vierge alongside Mirabeau Etoile Rosé 2022 served from a Magnum, followed by herb crusted rack of Wicklow lamb, garlic purée, confit potato, first of season vegetables and pan jus paired with Mirabeau La Réserve Rosé 2022. And to finish, choux au craquelin, lemon curd cheesecake cream and summer red berries will be served with a Mirabeau Rosé Gin Cherry Negroni followed by chocolate petits fours.
