Breakfast meal prep is our best friend on these dark winter days – fuelling up with the best ingredients is essential. We love this overnight oats recipe from Linwoods.

Preparation Time – 10 minutes
Cooking Time – 12 – 15 minutes
Servings – 2

Ingredients:

* 2 apples, cored and diced
* 1 tbsp maple syrup
* ¼ tsp cinnamon
* 2 tbsp water
* 100g jumbo oats
* 100g apple puree
* 400ml water or milk of choice
* ½ tsp cinnamon
* 2 tbsp maple syrup
* 2 heaped tbsp Linwoods Flaxseed, Pumpkin, and Sunflower Seeds + more for topping
* Pumpkin seeds for topping

Directions:

1. Add the diced apple, maple syrup, cinnamon and 2 tbsp of water to a pot over a medium heat. Bring to the boil, cover and simmer for about 8 – 10 minutes.
2. Meanwhile, add the oats, apple puree, water or milk, cinnamon, maple syrup and flax to two bowls or one pot, depending on your cooking method. Cook on high in the microwave for 2 minutes per bowl or in a pot over medium heat for 5 – 8 minutes.
3. Serve oats topped with cinnamon apples, some more flax on top, pumpkin seeds and a little more maple syrup if desired.
