Paula Pastry offers guests a chocolate-making journey exclusive to Stanleys at Ashford Castle

The Paula Pastry Dessert Experience has just launched at Ashford Castle. Under the expert guidance of renowned pastry chef, Paula Stakelum, this experience invites guests to delve into the world of chocolate making, exploring the art of flavour balancing and learn about the hotel’s signature chocolate creations.

Guest’s will join Paula Stakelum, otherwise known as Paula Pastry, in Stanely’s Diner at Ashford Castle, where she will share insights into developing Ashford Castle’s exclusive ‘Legend’ chocolate blend, enriching guests’ understanding of the passion and craftsmanship of the hotel’s team of chocolatiers as well as the ethos of the hotel’s exclusive chocolate partner, Valrhona Chocolate.  

During this experience, guests will begin the experience by making their very own chocolate bars using the castles bespoke ‘Legend’ Chocolate followed by a dessert tasting where;

Paula will create a pre-dessert and dessert live before guests’ eyes, using seasonal ingredients freshly foraged from the estate grounds and harvested from the estate’s lush kitchen gardens. From wood sorrel and wild raspberries to crab apple and strawberries, each element of the guests’ desserts will be meticulously chosen to reflect the essence of the season and the castle’s commitment to organic, local and home-grown produce.

Guests will also learn about the origins of the ingredients, the process behind their harvest, and the inspiration driving Paula’s chocolate creations. A palate cleanser in the form of a sorbet or citrus-based ice cream will prepare guests for the delicious dessert ahead, ensuring every bite is bursting with flavour.

The Paula Pastry Dessert Experience brings the essence and ethos of Ashford Castle to life and is available to guests post or pre-dinner with a maximum of 6 guests allowed per group. Guests can dine at any of the food outlets at Ashford Castle or the wider Ashford Estate before making their way to Stanley’s Diner on the ground floor for this private dessert experience.
