In collaboration with Findlater, guests will enjoy a five-course wine tasting and dining experience, which will be hosted in Wilde’s restaurant by Little Beauty vineyard owner, Fleur McCree and her husband. The duo will welcome guests and provide a short history of the vineyard before guiding guests through a selection of Little Beauty wines, paired to perfection with an inspired five-course tasting menu.
The five-course meal will be devised by The Lodge at Ashford Castle’s Executive Head Chef, Jonathan Keane, featuring beautiful ingredients from local and Irish producers and homegrown flavours from the Ashford Estate gardens.
Little Beauty is a privately-owned estate set in Marlborough’s Southern Valleys, where the wines differ slightly from the mainstream. The vineyard is spread over five plots, each with its own soil profile and microclimate, which allows Little Beauty’s resident winemaker, Eveline Fraser, formerly of Cloudy Bay, the chance to make unusually complex, multi-dimensional wines. Each wine in the Little Beauty collection is produced in limited quantities and features an exclusive range of five varietals and individual nuances.
