This summer, Minuty returns to WILDE at The Westbury as the exclusive rosé partner, bringing the effortless charm of Provence to one of Dublin’s most iconic dining destinations. Running until September, guests can enjoy a curated selection of Château Minuty rosés – each perfectly paired with seasonal seafood specials designed to complement the crisp, delicate flavours of the wines. It’s a celebration of summer, best enjoyed glass in hand, terrace-side.


Transporting you straight to Provence, this curated offering is guided by WILDE’s Head Sommelier, Eric Arens, and features a flight of three exceptional Minuty rosés for €36: Minuty Prestige 2024, Château Minuty Rosé et Or 2023, and Château Minuty 281 2023 – each served in a 75ml pour. Designed to showcase the signature freshness, elegance and finesse of the iconic winery, the experience is perfect for both devoted rosé enthusiasts and those discovering Minuty for the first time. The verdant terrace setting and refined menu promise a moment of Riviera-style indulgence in the heart of the city.

This extraordinary tasting journey is accompanied by a perfectly paired food menu to enjoy in the optimum summer city surroundings. The Summer on the Terrace menu features a variety of luxurious seafood options, from the Wilde Seafood Platter (€125) with dill cured salmon, Carlingford Lough rock oysters, seared tuna sashimi, West Cork mussels, brown crab claws, prawns, and crusty bread to lighter bites such as John Stone grass-fed Irish beef fillet carpaccio with rocket, parmesan, aged balsamic, and anchovy aioli (€26), Six Carlingford Lough rock oysters with shallot relish (€30), and the Wilde Dublin Bay prawn cocktail (€35). For the ultimate indulgence, Caviar Beluga Huso-Huso (30g, €290) is also available.

Minuty Prestige 2024 (€15 per glass and €60 per bottle) continues the legacy established over 25 years ago when Jean-Etienne and François Matton set out to create a signature rosé that captured the essence of Provence. This vintage reveals expressive floral notes followed by aromas of apricot and yellow peach, with a palate defined by finesse, subtle citrus, and a delicate saline finish. The bottle’s elegant design, refreshed in 2020, reflects the timeless character of this iconic rosé.

Château Minuty Rosé et Or 2023 (€23 per glass, €89 per bottle) is an Estate wine that first appeared in 2009. The creators wanted to take the winery’s signature subtle flavour and intense aromas to the next level and so the winery’s three main terroirs were expertly blended to capture the Château Minuty flavour in Rose et Or.

Château Minuty 281 2023 (€44.50 per glass, €175 per bottle) came out in 2015 and is the latest Minuty rosé. The intense pantone blue seen on the bottle represents a celebration of the nearby Mediterranean Sea, which influences and elevates the Minuty vineyard every day. 281 is also inspired by the visionary and revolutionary ambition of Etienne Matton, father of Jean-Etienne and François. He began cloning the winery’s exclusive Grenache in the 70s, which now forms the 281 vintage’s best plots. The 281 is a rosé for celebration, haute-couture and fine dining.
